TASTY TUESDAY

Easter is right around the corner! If you're feeling festive and creative, give these a try. Especially perfect if you have an Easter party or dinner to attend on Sunday! Megs and I (Lisa) each made a fun version of our own birds nest.



Ingredients:

6 oz. crispy chow mein noodles
1/2 bag semi sweet chocolate chips (6 oz.)
1/2 bag butterscotch chips (6 oz.)
1 cup creamy peanut butter
1 teaspoon vanilla
1 tbs. unsalted butter
36 jelly beans or cadburry eggs
12 peeps (optional)

Directions:
  • Generously grease a muffin pan with the butter 
  • In a large microwavable bowl heat the chips in 30 second intervals until melted, stirring after each increment
  • Add the peanut butter to the chip mixture and stir till it's nice and creamy
  • Carefully add the chow mein noodles stirring with a wooden spoon or rubber spatula
  • With a large spoon, mold the noodles into the muffin tin, indenting the tops slightly with the back of your spoon
  • Chill the nests for an hour or so, until hardened
  • Once chilled, remove the nests from the tin using a butter knife
  • Put on a cute plate and add three eggs to each nest, and maybe even a peep!


Ingredients:

3 tbs. butter
1 package of regular marshmallows (about 4o or 10 oz.) or 4 cups mini marshmallows
6 cups Kellogs rice crispies
package of chocolate eggs

Directions:
  • In large saucepan, melt the butter over low heat
  • Add marshmallows and stir until completely melted, remove from heat (or microwave butter and marshmallows on high for 3 minutes, stirring after 2 minutes)
  • Add Kellogs cereal and stir until completely coated
  • Divide mixture into pre-sprayed muffin tin, shaping each cup
  •  Let it cool, then remove the rice crispy cups
  • Add 3 cute chocolate eggs to each nest

 Enjoy and make it a great Easter this year!

  1. Not a great picture, but I made some tonight for my students! I found a some edible Easter grass that I threw on the nests...in hindsight I wish I had gotten green!

  2. Those look delicious! I've been disappointed the past couple of years not to be able to find my favorite Easter candy, the green coconut nests with jellybeans on top, but perhaps a batch of these will ease my disappointment.
