Chocolate Chip Cake

This recipe is one of my Mom's specialties. Some may refer to it as oatmeal chocolate cake. But our family really loves chocolate so we added chocolate chips. We usually have no frosting because it is pretty rich and delicious without it, but it's totally up to you! They are moist and delicious. This is what my sisters and I would ask for every year on our birthday!


1 3/4 cup boiling water
1 cup oats
1 cup brown sugar
1 cup white sugar
1/2 cup butter
2 eggs
1 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cocoa
2 cups chocolate chips

  1. Mix boiling water and oats, set aside (can be done in a microwavable bowl as well, just like making oatmeal)
  2. In a separate bowl add sugar, butter, and eggs one at a time. Cream together.
  3. Slowly add flour, baking soda, salt, and cocoa. Mix together.
  4. Add oatmeal mixture and blend on slow speed.
  5. Once everything is combined add 1 1/2 cups chocolate chips
  6. Sprinkle the remaining chocolate chips and some sugar on the top of the cake 
  7. Bake 35 minutes at 350 degrees

    This looks so good! I made a chocolate chip pie for the first time ever at Thanksgiving this year and it was sooooo yummy!
