So I am a huge fan of taco soup. It is a Mexican soup but based on all the research I found it was first made in Texas, who knew?!?! It is fun and simple to make with things that have been sitting in your cupboard for too long. So bust out all those beans and cans of corn and make a yummy soup!

There is a lot of variation with this recipe but this is what I used. I basically threw everything into a pot and heated it up. So easy it's almost ridiculous.

1 can canned chicken
1 can garbonzo beans
1 can pinto beans
1 can corn
1 small can tomato sauce
1 large diced bell pepper
1 small diced tomato
1 1/2 cups water

And I seasoned with taco seasoning, crushed red pepper, salt, pepper, and a splash of chili powder. I then topped it off with a dollop of sour cream and sprinkle of cheese...and of course hot sauce :)

In a large skillet cook beef over medium heat, drain. Season as you please! Chili powder and pepper or even red chili peppers is delicious! Or if you have it taco seasoning. Then combine the meats with the canned mixtures and water in a big pot. Cook for 15-17 minutes on medium heat. Serve and enjoy.


As a side dish Chase contributed some home made chips! We had some leftover spinach tortillas so he went at it. 

He laid two tortilla shells (or desired amount) on a cookie sheet and brushed on a thin layer of cooking oil on top side. Then he placed tortillas on top of each other with the oil side facing up and sliced them with a pizza cutter. Then he cooked them at 350 for 8 minutes. And lastly, season with salt! Dip in salsa and there you have it.
