This week our beautiful mama did some baking for us!
We grew up with delicious home cooked meals and
are very thankful for our talented mama.

Today you're in for a tasty and beautiful big apple pancake!
Thanksgiving breakfast anyone?


1/4 c. unsalted butter (I used what I had--salted)
2 lg. apples cored and sliced into 1/4 inch wide wedges
1/2 c milk
1/2 c. flour
4 large eggs
3 Tablespoons granulated sugar
1/2 t. vanilla
1/4 t. salt *powdered sugar
Well seasoned 10-11 ' heavy cast iron skillet or another ovenproof dish


Preheat oven to 450 degrees. Melt butter in skillet (or another oven-safe dish), then transfer 2 Tablespoons of it into a blender. Add apple wedges to skillet and cook lightly turning once until apples begin to soften (3-5 minutes). While apples are cooking, add milk, flour, eggs, granulated sugar, vanilla, and salt to butter in blender and mix. Pour butter batter mix over apples and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Remove from oven and dust with powdered sugar. Serve immediately. *puffed pancake will go down--it's okay :-)

*To make dish more healthy, I substituted white flour for oat flour, sugar for xylitol or splenda, and 2 large eggs and 2 egg whites (instead of 4 whole eggs). I also added 1 scoop of vanilla protein powder.
